Pickering emulsions co-stabilised by cellulose nanofibres and nicotinamide mononucleotide

Emulsified solid particles adsorbed at the oil–water interface can stabilise Pickering emulsions by acting as a physical barrier to coalescence of oil droplets. Cellulose nanofibres (CNFs) have been used in food-grade because their excellent performance low cost and sustainable material. Nicotinamide mononucleotide (NMN) is small-molecule zwitterion with polar functionality capable interacting CNFs. The ability cationic CNFs NMN co-stabilise sunflower was investigated under various conditions using methods such contact angle measurement, creaming stability, rheology, microscopy, thermal water-holding capacity. Emulsions ultra-high good gelation, high plasticity were obtained single-step shear dispersion 0.25 wt% CNFs, 0.05–0.3 NMN, near-neutral pH. stabilised through electrostatic interactions hydrogen bonding transferred into aqueous phase interacted form complex three-dimensional network structure, which improved bulk viscosity steric hindrance emulsion created more compact adsorption interfaces. Overall, synergistic effects factors allow effectively making it an exciting method that be encapsulate oil-soluble substances.
